Just a quick recipe today. A very quick and easy recipe for Christmas Cookies. Enjoy!
Heartmade Recipe ~ Grandad’s Christmas Cookies
These were made with a slight adaptation to my Dad’s wonderfully healthy and delicious cookie recipe (thank you, Dad!) They’re not strictly Christmas cookies, but they make me feel like Christmas.
You could add some Christmas spices and grated orange peel, or maybe a little left over mincemeat, to make them taste like Christmas, if you like.
This is how Dad gave the recipe to me:
Melt together slowly 4oz butter, 3oz demerara sugar and 1 desertspoon of gold syrup.
While melting (slowly), mix together 4oz self-raising flour and 4oz oats, plus 2oz chopped nuts (pecans) and 2oz fruit (cranberries).
Mix these ingredients into the melted ingredients thoroughly.
Take tablespoonfuls of the mix (slightly smaller than a golf ball) and press flat onto a baking tray.
Bake at 170 degrees for 15 minutes.
Resist temptation and leave to cool for at least 10 minutes, so they don’t fall apart.
Cool, eat or give away!
This is such a fab recipe, because you can adapt it and include your favourite fruit and nuts. I used a cranberry and macadamia nut mix, which caught my eye at the market. But you could add chocolate chips, exchange the syrup for honey, or mix in a mashed banana or some grated apple with cinnamon or nutmeg.
Made from start to finish in less than half an hour, these cookies are loved by everybody and make a beautiful gift if stacked up and wrapped in clear film and Christmas ribbon with a pretty handmade gift tag. :O)
